HOW TO MAKE SIMPLE CHICKEN STEW

Are you stuck what to make for tea? Sometimes trying to think of new ideas to cook can be hard especially when you are busy and lots to do therefore read on to find out how to make simple chicken stew. If you plan your weekly meals you most certainly can eat healthy meals and it makes food shopping a lot easier and quicker when you have planned your meals. Make sure you have eaten before you go shopping because it can tempt you into buying more sweet treats.

Serves 4

Ingredients

2tbsp Olive oil

1 red onion finely sliced

1 carrot finely chopped

1 leek sliced

1 red pepper finely chopped

2 cloves of garlic crushed

150ml chicken stock

400g can chopped tomatoes

1tbsp sundried tomato paste

400g cooked chicken breasts chopped into small chunks

Method

Heat the oil in a large frying pan.

Add the onion, carrot, leek and red pepper and cook for 5 minutes on a medium heat.

Add the crushed garlic, chicken stock, tomatoes, sundried tomato paste, stir well and bring to the boil.

Cover and simmer stirring occasionally until slightly thickened.

Mix in the cooked chicken pieces and heat through for 5 minutes.

Serve with pasta, rice or quinoa.

I choose to serve mine with quinoa.

I did all the preparation for this meal in the morning therefore it was quick and easy to make for tea. I did take the easy option of using the quinoa you can buy in a packet and only requires 2 minutes to heat in the microwave because it does save time if you are in a rush.

Flatbread Pizzas With Chickpea and Basil Pesto

These Pizzas are easy to make and taste so good!!!

Ingredients

1 clove garlic crushed

Large handful of basil leaves

20g Cashews, roasted for 5 minutes until golden

50g tinned chickpeas

2 tbsp passata

5 tbsp extra-virgin olive oil

2 flatbreads

Cherry tomatoes halved

2 tsp dried basil

Feta cheese cubed

Salad to serve

Method

Preheat the oven to 200 / gas 8

Place the garlic, basil, cashews, chickpeas, passata and olive oil into a food processor and blitz to form a rough paste. Season with salt and pepper.

Place the flatbreads on a baking tray.

Divide the pesto between the flatbreads and spread evenly.

Arrange tomatoes and feta cheese on the flatbreads.

Sprinkle with dried basil (optional)

Bake in the oven for 7-9 minutes until the base is crispy and the tomatoes have softened.

Serve with salad of your choice.

If you are short on time you can make the pesto the day before and store in a container in the fridge.

Cheesy Stuffed Pimentos

This can be served as a main meal or side dish.

Serves 4

Ingredients

Rapeseed oil for griddling

6 long thin pimentos Peppers halved lengthways and seeds removed.

175g ricotta cheese or dairy free spread of avoiding dairy.

Juice of 1/2 lemon

Small bunch of fresh tyme

Few fresh basil leaves

Salt and ground black pepper

Method

Heat a griddle pan and brush with a small amount of oil.

Griddle the Peppers on both sides until lightly charred.

Mix together the ricotta, thyme, lemon juice and seasoning.

Spread the mixture into the Peppers while they are still warm. Sprinkle with a few basil leaves and serve.

Bean And Chorizo Stew

Do you fancy adding a bit of spice to your evening meal?

For a quick, easy and tasty meal give this a try.

Serves 4

Ingredients

Rapeseed oil for frying

110g chorizo, skin removed and cut into small pieces.

1 red onion finely chopped

1 garlic clove crushed

400g pasatta

600g tin cannelloni beans in water drained

1 tsp dried parsley

Salt and pepper to season

Method

Put the oil in a saucepan with a lid and heat.

Add the chorizo and cook until you can see the oil run from the chorizo.

Add the onion and garlic and cook, stir occasionally and use the lid to stop the onion from browning.

Add the beans and pasatta, stir all the ingredients together and simmer for 10 minutes.

Add the parsley and seasoning and stir.

Serve and enjoy, it can be served alone or with crusty bread.

Chorizo And Chicken Pie

This is a great meal and it can be prepared the day before which is what I do a lot with meals so it helps when you get home after a busy day. You don’t have to decide what to cook just pop it in the oven.

Serves 4

Ingredients

800g potatoes chopped for boiling.

1 tbsp milk

25g butter

1 onion chopped into small pieces

4 chicken breasts cut into small pieces

2 garlic cloves crushed

1 red pepper chopped into small pieces

170g chorizo sliced

1 tsp paprika

1 tsp chilli powder

500g passata

2oz cheddar cheese grated

salt and pepper

Oil for frying

Method

Place the potatoes in a pan and cook for 20 minutes or until ready for mashing.

Drain and mash adding the milk and butter.

Heat the oven to 200 / Gas 6

Fry the onions in a bit of oil for around 10 minutes on a low heat, stirring occasionally.

Add the chicken and garlic and continue to cook for 5 minutes until lightly browned and sealed.

Add the pepper, chorizo, paprika and chilli and cook for a further 5 minutes.

Add the passata and salt and pepper and simmer for 10 minutes.

Pour into an oven proof dish this can either be 1 large dish or use smaller individual dishes which was what I did.

Spread the mash potato over the chicken and chorizo mixture.

Sprinkle over the grated cheese and bake for 50 minutes.

Serve and enjoy.

Fancy A Strawberry Sweet Treat

If you are like me and like strawberries and meringue then this will be a great recipe for you.

Ingredients

4 meringue nests

300g of strawberries

300ml of plain yogurt of your choice I used greek yogurt, if you can’t have dairy soya yogurt will work as well.

4 wine glasses (without the wine)

Method

Place the meringues in a freezer bag and crush into small pieces.

Mash the strawberries using a fork, keep 4 for decorating the top.

Mix the meringue with the yogurt in a bowl.

start layering your glasses start with the strawberries and their juice, followed by yogurt and meringue mixture.

Divide equally between the glasses.

Decorate the top layer with the remaining strawberries.
