Slow Cooked Chilli Con Carne Served In Stand ‘N’ Stuffed Tortillas

This recipe made 4 tortillas and an extra 2 servings for next time.

Slow cooker recipes are great if you have a busy lifestyle or just like your meal to be cooked for when you walk through the door.

Ingredients

1 tbsp. rapeseed oil

50g bacon cut into small pieces

1 red pepper deseeded and chopped

450g lean mince beef

2 tsp chilli powder

1 tin of kidney beans or baked beans

1 carton of passata

salt and pepper

4 stand ‘N’ stuff tortillas

1 red onion chopped

Method

|Heat the oil in a large frying pan

Add the bacon, onion and pepper and fry until transparent.

Stir in the beef and lightly fry until browned.

Stir in the chilli powder, kidney or baked beans and passata.

Season with salt and pepper.

Transfer to the slow cooker and cook on low for 6-8 hours.

Serve in your tortillas and enjoy.

You can fill them more than I have I don’t like too much in mine, but its your choice.
I served mine with some sour cream and grated cheese, again that is optional and your choice.
